Description

These fried, flour tortilla tacos are a staple across bars in the Illinois Valley (north central part of the state). They are an easy week night meal that always pleases everyone.

Instructions

Meat
  • Brown the ground beef over medium high heat and season with salt and pepper.
  • Drain off excess grease.
Note: You could easily add taco seasoning if you like.

Shells
  • In a large sauté pan, heat vegetable oil over medium high heat.
  • When the oil is hot, add a single flour tortilla.
  • The tortilla will immediately start to puff up. Poke the large air bubbles with tongs to release the air.
  • When the bottom has turned golden brown, turn the tortilla over and immediately fold in half.
  • Hold the tortilla until the bottom has turned golden brown.
  • Flip to the other side and cook until golden.
  • Remove the tortilla from the pan and place on a paper towel lined baking sheet to drain.
  • Repeat the process until all tortillas are cooked.
Note: You can keep the baking sheet with cooked tortillas in a very low oven to keep warm while cooking the remaining tortillas.

Toppings
  • Dice onion.
  • Shred lettuce.
  • Dice tomatoes.

Assemble
  • Add a scoop of ground beef to each shell and serve two to each person.
  • Let each person top their own taco with what they like.
Note: I included the toppings that my family likes, but you can easily change this up.
