Instructions
1. Mince the garlic. Halve the baby bok choy lengthwise. Slice the scallions.
2. In a small bowl, whisk together soy sauce, fish sauce, sesame oil, chili garlic sauce, and coconut sugar. Set aside.
3. Heat 1 tbsp olive oil in a large skillet or wok over high heat. Add bok choy cut-side down and cook without stirring 2-3 minutes until charred. Flip and cook 1 minute more. Remove and set aside.
4. Add remaining olive oil to the skillet. Add garlic and ginger paste and stir-fry 30 seconds until fragrant.
5. Add ground turkey and cook, breaking it apart, 5-6 minutes until cooked through.
6. Pour sauce over turkey and toss to combine. Cook 1 minute.
7. Remove from heat and stir in fresh Thai basil leaves until just wilted.
8. Plate bok choy and spoon turkey over the top. Garnish with scallions and a squeeze of lime juice.
