Instructions
1. Cook jasmine rice according to package directions.
2. Shred or julienne the carrots. Mince the garlic.
3. In a small bowl, mix soy sauce, gochujang, sesame oil, and honey to make the sauce.
4. Heat avocado oil in a skillet over medium-high heat. Add ground turkey and cook, breaking it up, for 6-7 minutes until browned.
5. Add garlic and cook 30 seconds. Add half the sauce to the turkey and stir to coat.
6. In the same skillet push turkey aside, add spinach and carrots and sauté 2-3 minutes until wilted and tender.
7. Fry eggs sunny-side up in a separate small pan.
8. Assemble bowls: rice on the bottom, turkey and vegetables on top, a fried egg, drizzle remaining sauce, sprinkle sesame seeds.
