Instructions
- Heat a large saute pan over medium heat. Add olive oil.
- When oil is hot, add onions and garlic. Sauté for 5 minutes, until starting to soften.
- Add ground lamb. Brown lamb until cooked through.
- Add paprika, allspice, red pepper flakes, ginger, salt and pepper. Mix until fully combined, cook for 1-2 minutes. Remove from heat and stir in fresh herbs.
Turmeric Rice:
Rinse rice until water runs clear, drain. - In a medium saucepan over medium heat, add olive oil and butter.
- When butter is melted, add 1/4 onion and 4 garlic cloves, saute until softened.
- Add rice and turmeric. Stir until combined. Add chicken broth and bay leaf, cover pan. Increase heat and bring to a boil.
- Reduce heat, allow to simmer 15-20 minutes, or until liquid is absorbed. Remove from heat and allow to sit for 5 minutes. Remove bay leaf, fluff with a fork and serve.
To Assemble Bowls
- In a bowl, layer Turmeric Rice, then top with some of the spiced ground lamb, tomatoes, cucumbers, hummus and feta. Sprinkle with more fresh mint and parsley if desired.
