  • 5.0 lb Chicken Breast
  • 1.0 piece Taco Seasoning Packet
  • 1.0 unit Hatch Green Chilis
  • 1.0 piece Lime
  • 2.0 cup Mozzarella Cheese
  • 3.0 oz Pepper Jack Cheese
  • 3.0 tbsp Pico De Gallo
  • 0.5 oz Cilantro
  • 2.0 cup Rice
  • 10.0 piece Burrito Tortillas
  • 3.5 cup Cottage Cheese
  • 0.5 cup Milk
  • 0.5 cup Red Enchilada Sauce
  • 2.0 tbsp Tomato Salsa
  • 3.0 tbsp Taco Seasoning

Description

High protein chicken burritos

Instructions

  1. Place chicken breast in slow cooker with taco seasoning packet, hatch green chilis, and lime juice and cook until tender (High 2-3 hours)
  2. Shred the cooked chicken.
  3. Make queso sauce by combining cottage cheese, milk, red enchilada sauce, tomato salsa, and taco seasoning.
  4. If you want, reserve some queso sauce for topping rather than mixing all of it in in the next step!
  5. Mix shredded chicken with mozzarella, pepper jack cheese, queso sauce, pico de gallo, and cilantro.
  6. Top tortillas with rice and then chicken mixture. Roll into burritos
  7. Lightly toast on all sides before serving
