  • 1.0 whole Chicken
  • 1.0 whole Lemon
  • 0.5 whole Onion
  • 4.0 tbsp Salt
  • 4.0 tbsp Brown Sugar
  • 1.0 piece Thyme

Instructions

  1. THE DAY BEFORE, put the chicken into a large pot, cover with water, and add the salt and brown sugar. Refrigerate overnight to brine
  2. When ready to cook, remove from brine, rinse, and pat dry
  3. Cover chicken well in spices/rub of your choice, making sure to get all the nooks and crannies and the inside cavity
  4. Cut onion & lemon into chunks and stuff inside the chicken along with a sprig of thyme, then tie the legs together so they can't escape
  5. Smoke at 225F for ~2 hours until the chicken is at ~130F
  6. Increase temp to 325 for around 30 minutes until chicken is at 160F to crisp up the skin
